Bacon, Eggs and Corn. Let me give you some history. It was either early 90s or late 80s. We had just got to either Georgia or South Carolina and we were broke. I don’t think I had started school yet. My dad was getting paid that afternoon, but this was early morning. Mama had two hungry boys to take care of. All that was left was a can of corn, some bacon and a few eggs. Not knowing what else to do, she threw it all in an electric skillet right there in the motel. It came out being pretty damned good. It’s been a staple in my family ever since. You ought to try it.
1 pack of bacon, cut up
2 cans of whole kernel corn, drained. I like Fiesta corn
Eggs to suit
Fry up your bacon, then drain most of the grease, but keep a little in the pan. Add the two cans of corn and mix until warm. Crack the eggs into the skillet and keep scrambling till the eggs are set. I add a little crushed red pepper after the fact for a little kick.
